This is what we had for dinner tonight, Andy made the Baby Arugula Spring Mix Salad with Sauteed Baby Bella Mushrooms, and I cooked up a simple Lemon Pepper Pappardelle Pasta, tossed with extra virgin olive oil, lemon juice and rind, salt and pepper. Garnished with crumbled vegetarian bacon and shaved parmesan regiano cheese.
The pasta is from Trader Joe’s and I was skeptical at first. But it turned out amazing!
