Lemon Pepper Pappardelle Pasta (Trader Joe’s)

This is what we had for dinner tonight, Andy made the Baby Arugula Spring Mix Salad with Sauteed Baby Bella Mushrooms, and I cooked up a simple Lemon Pepper Pappardelle Pasta, tossed with extra virgin olive oil, lemon juice and rind, salt and pepper. Garnished with crumbled vegetarian bacon and shaved parmesan regiano cheese.

The pasta is from Trader Joe’s and I was skeptical at first. But it turned out amazing!

Organic penne pasta with roasted red pepper, vine-ripen roma tomatoes, freshly chopped basil and herbed goat cheese

Tossed with olive oil, pesto sauce, freshly squeezed lemon juice, salt and pepper. Sprinkled with grated lemon rind. Should have used toasted pine nuts as well, but I ran out.
